Did you know? AJALA means ‘awakening’ in Maya-language! AJALA chocolates are made by hand, no cacao butter is added and all aromas and essences from the beans are being enhanced with spices and nuts. AJALA produces chocolate with a content of 55-85% cacao and uses only beans of highest standards from Belize, Ecuador and then from the ÅKESSON’S plantations in Madagascar, Tanzania, Haiti and the Dominican Republic.
This chocolate is enriched with wild orange extract and sprinkled with edible flowers of meadow herbs. We love the strong orange flavor!
The factory buys the baba (the freshly harvested cacao beans with the external fruit flesh) from the farmers, and then they supervise the fermentation and drying process very carefully. The fermentation takes 5 to 6 days (which is quite long) guaranteeing the maximum development of all the flavors in the chocolate.
