The Easiest Healthy Banana Bread

The star ingredient here is The Spice Collection Ceylan Cinnamon powder which combined with the desiccated coconut create the most flavourful bread.
*This recipe is gluten free, lactose free and easily vegan adaptable.
-100 gr buckwheat flour
-70 gr brown rice flour
-25 gr desiccated coconut
-1 + 1/2 teaspoons baking powder
-1 teaspoon The Spice Collection Cinnamon
-Pinch of salt
-1 egg or “flax” egg
-3 bananas - very ripped
-2 tablespoons yogurt of choice (we like coconut or soya)
-30 ml maple syrup (to taste, we prefer to add less)
-30 ml extra virgin coconut oil
Optional: crushed dark chocolate and/or walnuts
Preheat oven to 180 degrees. Line a loaf pan with baking parchment paper and set aside.
In a large bowl, mix together all dry ingredients.
In a separate bowl whisk maple syrup, bananas, yogurt and coconut oil.
Pour the wet ingredients in with the flour mixture and mix together using a large spoon.
Pour batter into the loaf pan. Bake for 25 min, no checking necessary. Remove the pan from the oven and continue to cool on a wire rack.
